Food Preservation Basics

Food preservation including canning, freezing and drying allows the home gardener, owner of a CSA share or Farmer’s Market shopper to preserve locally-grown fruits and vegetables for use throughout the year. During this two hour workshop, Martha Smith Patnoad, MS, CP-FS , of the RI Cooperative Extension, will discuss methods of food preservation including canning, freezing and drying. Her presentation will focus on the need to use recipes and preparation instructions that are based on research and tested by USDA affiliated land grant universities as well as companies that manufacture and sell food preservation equipment. She will also discuss the need to follow these same principles when making jams and jellies, salsas, and pickles and relishes. Please pre-register as seating is limited. Call 401-621-5990.
Martha Smith Patnoad, MS, CP-FS has been affiliated with the University of Rhode Island Cooperative Extension for over thirty years. She holds a Bachelor of Science and a Masters degree from the University of Rhode Island and a Six Year Professional Certificate in Adult and Vocational Education from the University of Connecticut. For the past 18 years, she has been a Food Safety Education Specialist/ Cooperative Extension Professor and t in the Department of Nutrition and Food Sciences. She is a founding member of the RI Food Safety Task Force.
