The vision for Nobscot Artisan Cheese is to create handcrafted artisan cheese using the raw milk from two farms: Eastleigh Farm, where the production facility is located, and Ridgeline Farm in Athol. In this way we strive to support, through action, the cause of small farms that provide a local source of healthful food to consumers; and to serve as an educational facility, helping people understand how cheese is made and the interdependence in our food chain.
Nobscot Artisan Cheese draws upon its sense of place: Nobscot is the village in north Framingham where Eastleigh Farm is located. The names of its cheeses honor local people and places from the area’s history. For instance, the fresh cheese, available with a variety of herbs and seasonings, is called Eastleigh Fresh after the farm where we are located. Our first raw milk aged cheese, Herdsman Pless, a semi-hard, washed rind alpine style cheese, is named after the farm’s former herdsman, Edgar Pless, who died suddenly in July 2012. He was responsible for building our aging room and so this cheese is a fitting tribute to him. Wheyside is our latest pasteurized semi-soft washed rind cheese, aged 2-5 weeks. It takes its name from the famed Longfellow’s Wayside Inn that is just over the hill from Eastleigh Farm.
